C’est Si Bon of Home: Crawfish Cheesecake

Louisiana cooking often begins with Louisiana Cookin’.   When the local crowd craves the c’est si bon of home or culinary curiosity piques the palate of the connoisseur in seasoned search of what Louisiana cuisine is all about, Louisiana Cookin’ magazine details the Louisiana lagniappe.

Featuring delectable details of our unique culture, cuisine and recipes to beat the jazz band, Louisiana Cookin’  is the guide we consult.  Crawfish is in season, and this recipe for Crawfish Cheesecake places the season and seasoning spotlight on the regional delicacy and c’est si bon of home.

Crawfish Cheesecake

Ingredients

½ (13.7-ounce) box Ritz crackers

1 cup unsalted butter, melted

½ pound andouille sausage, sliced

½ pound crawfish tail meat

¼ cup chopped fresh jalapeño pepper

24 ounces cream cheese, softened

1/3 cup sour cream

1 tablespoon chopped fresh thyme

1 teaspoon kosher salt

½ teaspoon ground black pepper

3 large eggs

½ cup Crawfish Beurre Blanc, recipe follows

Directions

Preheat oven to 325°.  In the bowl of a food processor, add crackers, and process until finely chopped.  In a medium bowl, combine cracker crumbs and butter.  Press mixture into bottom and 1 inch up sides of a 9-inch springform pan. Bake 10 minutes; set aside.

In a medium skillet over medium high heat, add sausage, and cook until lightly browned, about 5 minutes.  Add crawfish and jalapeño, and cook until jalapeño softens, about 3 minutes.  Remove from heat.  Set aside, and let cool.

In a large bowl, beat cream cheese and sour cream with a mixer at medium speed until creamy. Gradually add crawfish mixture, thyme, salt, and pepper, and beat until combined.  Add eggs, one at a time, beating until just combined after each addition.

Pour cream cheese mixture over prepared crust. Set springform pan in a roasting pan, and fill with water half-way up the sides of the springform pan.  Bake until set and cheesecake jiggles lightly in the center, about 1 hour.  Remove from oven, and let cool completely on a wire rack.  Cover, and refrigerate at least 4 hours or up to 3 days before serving.  Serve with Crawfish Beurre Blanc, if desired.  Serves 8

Crawfish Beurre Blanc

2 teaspoons vegetable oil

¼ pound crawfish tail meat

¼ cup chopped shallot

1 teaspoon kosher salt, divided

½ cup dry white wine

½ cup white wine vinegar

1 tablespoon hot sauce

4 sprigs thyme

1 tablespoon peppercorns

2 cloves garlic

½ cup heavy whipping cream

1 cup unsalted butter, cubed

Directions

In a medium skillet over medium-high heat, add oil.  Stir in crawfish, shallot, and ½ teaspoon salt; cook until shallot is tender, about 3 minutes. Set aside, and let cool.

In a medium saucepan over medium-high heat, combine wine, vinegar, hot sauce, thyme, peppercorns, and garlic, and cook until reduced by one-third, about 15 minutes. Strain liquid through a fine mesh strainer; return liquid to pan.

Add cream, and cook until the mixture thickens enough to coat the back of a spoon, about 10 minutes. Reduce heat to medium-low.  Stir in butter, one cube at a time, until butter is melted and the sauce is smooth; stir in remaining ½ teaspoon salt. Stir in crawfish mixture.  Serve immediately. Serves 6.

Take Cover Now: Tornado Damage

There is nothing pretty about a tornado or tornado damage, and take cover now is a warning best heeded.

Period.

This past Sunday afternoon we learned that lesson firsthand as our town-neighborhood-house was hit by a tornado.

We are no strangers to the force and fury of a hurricane.

A tornado however, is an extremely rare occurrence in Central Louisiana. This tornado experience was a first for us.

Our local news station was live on the air with the entire weather team covering the storm.  The senior weatherman shouted “take cover now” and with that we took cover in the guest bathroom bathtub.

We never did hear the roaring train sound so many people remark they hear as a tornado approaches or when one is overhead.

What we did hear is the terrifying sound of trees, shingles, and various projectiles hitting the house.

The entire top of our neighbor’s magnolia tree was the first thing we saw as we opened our front door.

Salvaged magnolia leaves placed in a mason jar injects a touch of simple beauty and Southern comfort into this otherwise ugly situation.

Utilities are truly a beautiful thing.

We lost power Sunday afternoon, got it back a little before midnight, lost it again Monday morning and didn’t see the light of lights until last night at 9:51 pm CST.

A big, big thank you goes out to the utilities workers for a job well done and most appreciated.

That was then,

and this is now.

The crepe myrtle to the immediate right is history as is the hydrangea.  The bird feeder chandelier was found one street over.

Howdy Do (the jockey) and the bird bath may be down but not out of the lawn and garden beautification game.

The roof is heavily damaged and the inside of the house is a victim of stained ceilings, wet carpets, dirty floors, etc…

Clorox bleach and Lysol spray is suddenly a hot commodity.

My desk/computer is in Dave’s man cave, and a large part of the ceiling in the room is soaked through and through.

That’s an odor one can only take for a few minutes at a time.

Blogging will slow as the smell increases.

I will probably need several more bottles of this stuff before all of this is over.

Roofs, ceilings, floors and sheetrock can be fixed.

We are safe and that’s all that matters.

Period.

Creating A Spring Scene

Picture-perfect moments, colors, subjects, and samplings worthy of creating a spring scene catch the eye, stir interest, and offer seasonal inspiration.

Being in the right place at the right time had its advantages for a I got a Nikon camera, I love to take a photograph blogger and a spirited blue jay with a bird bath all to itself.

Creating a spring scene scenario went on for a good fifteen minutes.

Nature provided a magnificent matinee, and the star of this one bird show appeared ready for his or her close-up.

Walking past the kitchen table on the way to afternoon coffee, I glanced down to see the April issue of Better Homes & Gardens opened to the feature In Praise of Violas.

Although not a practicing member of the ladies that lunch club, I do love the idea of lunching, and the Southern Living feature The New Ladies Lunch is a delightful read on the subject.

Planning the Mother’s Day menu is soon to be the task at hand, and these Neiman Marcus Cheddar Cheese Biscuits look to be a Southern scrumptious must make.

Neiman Marcus Cheddar Cheese Biscuits

Ingredients

2 ½ cups all-purpose flour

1 ½ tablespoons baking powder

1 teaspoon salt

1 cup vegetable shortening

1 cup (4 oz.) freshly shredded sharp Cheddar cheese

1 cup buttermilk

Parchment paper

Directions

Whisk together first 3 ingredients in a large bowl.  Cut in shortening with a pastry blender until mixture resembles small peas and dough is crumbly; stir in cheese.  Add buttermilk, stirring just until dry ingredients are moistened.

Turn dough out onto a lightly floured surface; knead 3 to 4 times.  Place dough in a bowl; cover and chill 1 hour.

Preheat oven to 350°.  Turn dough out onto a lightly floured surface.  Pat or roll dough to 1-inch thickness; cut with a 1 1/2-inch round cutter, and place on parchment paper-lined baking sheets.  Bake at 350° for 20 to 22 minutes or until golden brown.

Unbaked biscuits may be frozen up to 1 month. Bake frozen biscuits as directed for 26 to 28 minutes or until golden brown.

Souvenirs: The Architecture and Interior Design Of The Broadwater Beach Hotel

Updating and refreshing blog posts is a necessary exercise in relevancy just as updating and refreshing our decor is.

A recent discovery of original images of the Broadwater Beach Hotel and Resort by architectural photographer Ezra Stoller and the video Biloxi Memories and the Broadwater Beach Hotel highlighting the heyday of the Broadwater Beach Resort is an exciting development (the video is posted towards the end of the post) and the main reason for updating Souvenirs: The Architecture and Interior Design Of The Broadwater Beach Hotel.

Over the summers of the early and mid 1970s, my family attended American General Contractors conventions in Biloxi, Mississippi.

I fell head over heels in love with the aesthetic of the buildings and interiors of our summer home away from home at 2110 Beach Boulevard on the Mississippi Gulf Coast, the Broadwater Beach Hotel and Resort aka the Broadwater.

Through words, Biloxi memories, Ezra Stoller images and decor accessories and accents in the style of, I invite you along on this tour of the architecture and interior design of the Broadwater Beach Hotel.

The Broadwater

The Broadwater Beach Hotel began as a modest hotel property in comparison to what the Broadwater would become under the ownership of its second owner, Mrs. Joe W. (Dorothy Dorsett) Brown.

Pete Martin Sr., the original builder and owner, was known as a well-known gambler and rum runner along the coast.

He opened the Art Deco style hotel in 1939, but the desire to invest in a Las Vegas hotel brought about the need to raise the funds to pursue this endeavor.

Enter Texas oilman Joe Brown.

Mr. Brown purchased the property from Pete Martin, Sr. in 1958, but unfortunately Mr. Brown passed away the next year.

Mrs. Joe W. (Dorothy Dorsett) Brown wholeheartedly embraced the task at hand of transforming the Broadwater into a travel destination contender.

Mrs. Brown, with a keen vision and staunch attention to architectural detail, brought to fruition a premier flagship beach hotel and resort property.

Dorothy Dorsett Brown launched a new Sea·Sun-Food·Fun architectural and mid-century modern interior design renovation complete with architectural enhancements, renovations and additions to the property.

Stunning on all beach fronts, the newly completed and modernly improved Broadwater Beach Hotel and Resort raised the hospitality stakes as the foremost host on the Mississippi Gulf Coast.

I have diligently tried to locate fixtures, fabrics and finery original to the Broadwater to little or no avail.

I’ve selected a few accents and accessories to illustrate the juxtaposition between yesteryear and today’s interior decorating tastes and trend.

Standing out among the other properties along Beach Boulevard Highway 90, a half circular exposed aggregate palm tree lined driveway and signature concrete canopy glamorously greeted guests.

As coastal day turned to coastal night, exterior recessed, spotlight and pathway lighting illuminated the Broadwater in shades of yellow tinted white.

As an extra-added “front of the house” visual treat, colored bulbs were added to the landscape spotlights in the front landscape beds.

The extensive grounds of the Broadwater included Lanai rooms, brick cottages, a resort triple play of swimming pools complete with waterfalls, diving board (remember when hotel pools had a diving board?) and postcard worthy panoramic views of the Gulf of Mexico, family friendly offerings such as a playground and train, elegant dining options featuring live musical entertainment, tennis courts, riding stables and premier Sun and Sea golf courses.

Regarded as a state of the art jewel of the Coast, the Broadwater Marina made its property debut to the boating public in 1965.

Dorothy Dorsett Brown spent $3,000,000.00 to build the marina.

That’s a lot of clams for 1965!

The Broadwater Marina could host up to 150 sail and powerboats.

Hotel shore to ship services such as boat or yacht housekeeping and room service was offered to the marina occupants.

The staff of the Broadwater Hotel and Marina, with effortless precision, mastered the art of hotel and southern hospitality.

No pedometer was needed to record the number of steps taken or distance walked around the sprawling grounds of the Broadwater.

Miles.

Trust me.

We clocked hours swimming under the waterfalls of the Lanai pool, holding court poolside from the swim up tables bedecked with fringed umbrellas in resort festive colors, and sipping Shirley Temples made to order with extra long stemmed cherries and crushed ice.

Room service delivered to the patio of Lanai room 127 was a daily treat enjoyed by the members of our future ladies who lunch club.

The room key from Lanai room 127 is a forever souvenir from the Broadwater Beach Hotel.

The objective of a hotel or resort is to treat guests to a memorable vacation and hospitality experience.

One of my most endearing memories of the Broadwater is the The Royal Terrace dining room.

Opulent yet accessible, the interior design and decorating accent mark was fittingly placed over swank and service.

These will forever be a few of my favorite hotel interior design and decorating things.

Destruction and devastation is the calling card of a hurricane, and the states in the Gulf Coast region have had their fair share come to call.

Dave the Builder’s sister, her husband who was stationed at Keesler Air Force Base, their toddler daughter, and her in-laws rode out Hurricane Camille at The Broadwater Beach.

Her mother-in-law worked at the Broadwater, and feeling the structure sound she suggested the young military family take refuge at the hotel.

Evacuation confusion ensued along the Mississippi Gulf Coast as hurricane coverage of the category 5 hurricane was thought to be aimed at Florida.

Hurricane warnings for the area were issued by 5:00 p.m. CST on Sunday, August 17, 1969.

The window of opportunity for them to safely evacuate slammed shut sooner than later, forcing them to seek protection in the motel rooms on the back part of the property.

Hurricane Camille’s landfall presence was unforgiving.

The storm surge was brutal, flooding and fires consumed and destroyed properties, and the death toll startling.

The Broadwater Hotel suffered storm surge flooding, and the Broadwater marina saw moderate damage.

The Broadwater weathered the storm and survived the damage of Hurricane Camille, coming out on the other side of nature’s wrath repaired and renewed.

This time.

I last visited the Broadwater Beach Hotel in 1998.

Financial neglect, design and decor disrepair, and changing times were now guests with no intention of checking out.

The bones of the main building were as I remembered, but an attempt at updating the once glorious interiors looked to be an epic fail.

Post Katrina Damage to Main Pools & Dining Room

Hurricane Katrina barreled through, and what parts of the Broadwater Hotel she didn’t destroy the wrecking ball did.

On this side of Hurricane Katrina in 2005 and the economic downturn of 2008 comes hope for a Broadwater revival.

Broadwater Development, LLC hopes to once again create resort magic on the Mississippi Gulf Coast where exceptional hospitality leaves a lasting impression- one that invites you back time and time again.

News of the revival of the Broadwater is exciting as is the discovery of Biloxi Memories and the Broadwater Beach Hotel highlighting the heyday of the Broadwater Beach Resort.

In Louisiana Spring Means Crawfish Boil Season Is Here

Spring in Louisiana means what it does to our neighbors to the north, east and west of the boot.

Beautiful blooms packing a powerful blast of in season colors.

Outdoor living at its finest.

Know what else it means? Spring means crawfish boil season is here. Louisianians love to boil, peel and eat these freshwater crustaceans in quantity and quality.  We do love our seafood here in the boot, and from March to June we set the tables, plan the menus, and prepare the seafood dishes around crawfish boil season.

Crawfish taste almost like lobster, with the differences between the two basically amounting to cost, size and seasoning.  Crawfish are native to the swamps and marshes of south Louisiana and farmed crawfish ponds of the Gulf Coast region.  Louisiana produces approximately 150 million pounds of crawfish annually, and also ranks as the nations number one provider of shrimp, oysters, crabs and alligator.  Boiled to seasoned perfection, the crawfish boil is a weekend backyard gathering, festival or fais do-do in the making.

Those in the best price for crawfish in your area know you need an app for that.  The Crawfish App is a free app available on iTunes.  The app uses your device’s location or an entered address to list crawfish vendors in the area. You have the ability to view by price, reviews, or distance.

It’s amazing how a crustacean can create culinary excitement throughout the cities and parishes.  We love to host a crawfish boil or two or ten during the season for friends, neighbors, coworkers and family.  Fire up the pot and bring on the onions, garlic, celery, potatoes, lemons, crab boil and culinary imagination.  I’ve been to crawfish boils where the host chef adds smoked or andouille sausage, okra, carrots, cabbage and fresh mushrooms to the seasoned boil.  The flavor and the taste can be summed up in three words.

Zatarain’s Shrimp & Crab Boil

Here’s a tip from the Places In The Home test kitchen~ add a drop of Zatarain’s liquid shrimp & crab boil to potato soup.

Delicious.

Zatarain’s® Crawfish Boil

Ingredients

3 pounds yellow onions

6 heads garlic

6 lemons, halved

1 package (73 ounces) ZATARAIN’S® Crawfish, Shrimp and Crab Boil – Complete

4 pounds small red potatoes

1 sack (35 to 40 pounds) live crawfish, cleaned

1 bunch celery, cut in bite-size pieces

¼ cup ZATARAIN’S® Concentrated Shrimp and Crab Boil

1 box ZATARAIN’S® Crawfish, Shrimp and Crab Boil – In a Bag

12 frozen half ears corn on the cob

Directions

Fill an 80-quart crawfish boiling pot with a basket 1/3 to ½ with water. Place pot on a jet-style propane burner on high heat. Add onions, garlic and lemon halves.  (You can use a small laundry bag for lemons and garlic. Or just leave the onions in the mesh bag they come in from the grocery with tags removed.)

Bring to full rolling boil. Stir in Crab Boil Complete.  Add potatoes (in their mesh bag from the grocery or a laundry bag).  Reduce heat to medium-low. Boil 20 minutes or until potatoes are fork-tender. Remove potatoes.

Return water to full rolling boil on high heat.  Add crawfish, celery, liquid Crab Boil and Crab Boil bag.  Return water to full rolling boil on high heat. Start checking doneness just before water returns to full rolling boil.  As soon as small gaps start to appear between the head and the tail on the largest crawfish, they are done.  Turn off heat.  Add frozen corn and cooked potatoes.  Let stand 15 minutes.  Remove corn and potatoes. Let crawfish stand for a minimum of 30 minutes, but 45 minutes is better. Serves: 20

To clean crawfish: Pour live crawfish into a washtub or ice chest; cover with water.  Drain.  Repeat 3 to 4 times until crawfish are clean.  Drain. Discard any dead crawfish and debris.
