New takes on classic and traditional Thanksgiving to Christmas dinner side dishes as delicious as these are sure to become must-have favorites at the holiday table.

Roasted Sweet Potato, Pear, and Onion

Ingredients

2 Bartlett pears, about 14 oz, cored and cut into wedges

2 small red onions, cut into wedges

2 small sweet potatoes (about 1 lb), cut into ½ inch-thick half-moons

6 sprigs thyme, plus more for serving

3 tbsp. olive oil

Kosher salt

Pepper

Directions

Heat oven to 425°F.  On large rimmed baking sheet, toss pears, onions, sweet potatoes, and thyme with olive oil and 1 teaspoon each salt and pepper.  Roast until golden brown and tender, 35 to 45 minutes.

Sprinkle with additional thyme if desired.

Rustic Mashed Red Potatoes with Parmesan 

Ingredients

3 pounds small unpeeled red potatoes, roughly chopped

½  cup whole buttermilk 1 cup salted butter, softened

4 ounces herbed cream cheese (about ½ cup)

4 ounces Parmesan cheese, shredded (about 1 cup)

1 ½ teaspoons kosher salt

½ teaspoon ground white pepper

¼  cup chopped fresh chives

Directions

Place potatoes in a large Dutch oven with cold water to cover by 2 inches. Bring to a boil over medium-high; boil until potatoes are tender, about 25 minutes.  Drain and return potatoes to Dutch oven over medium.  Cook, stirring once, until potatoes dry out slightly, 30 to 50 seconds.

Place buttermilk and butter in a microwavable glass bowl, and microwave on high until warm, 30 to 60 seconds.  Add warm buttermilk mixture, cream cheese, Parmesan, salt, and white pepper to potatoes, and coarsely mash with a potato masher to desired consistency.  Sprinkle with chives just before serving.

Reheating Instructions:

Slow Cooker:  Spoon potatoes into a 4 to 6 qt. slow cooker.  Cover and cook on high until heated through, about 2 hours.

Oven: Reheat in a tightly covered baking dish at 350°F until heated through, about 1 hour.

Ingredients

4 slices bacon, chopped

1 medium shallot, chopped

1 Tablespoon fresh thyme

2 teaspoons sherry vinegar

3 cups frozen corn, thawed

1 teaspoon pure honey

Directions

Cook bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper towel–lined plate with a slotted spoon; reserve skillet.

Add shallot and thyme to reserved skillet.  Cook, stirring occasionally, until tender, 2 to 3 minutes.  Add vinegar and corn. Cook, tossing until heated through, 4 to 5 minutes.  Remove from heat and stir in honey and reserved bacon.

Ingredients

3 cups peeled, seeded, and chopped carnival squash

3 cups peeled, seeded, and chopped butternut squash

3 cups peeled, seeded, and chopped hubbard squash

2 (8-ounce) packages wild-mushroom medley

3 tablespoons unsalted butter, melted

3 tablespoons olive oil

¾ teaspoon coarse salt

¾ teaspoon ground black pepper

Garnish: fresh thyme

Directions

Preheat oven to 425°.  Line a large rimmed baking sheet with aluminum foil.

In a large bowl, mix together carnival, butternut, and hubbard squash and mushrooms.  Add melted butter, olive oil, salt, and pepper, and stir to combine.  Place on prepared baking sheet.  Roast for 25 to 30 minutes, or until tender and brown.  Garnish with thyme, if desired.

Pressure Cooker Sweet-and-Sour Cabbage

Ingredients

6 cups shredded red cabbage

2 cups chopped apples

¼ cup cider vinegar

¼ cup water

3 tablespoons packed dark brown sugar

1 tablespoon canola oil

1 ½ teaspoons dried thyme, crushed

¼ teaspoon salt

¼ teaspoon black pepper

Dash ground allspice (optional)

Directions

In a 6-qt. electric or stove-top pressure cooker combine all of the ingredients.

Lock lid in place.  Set electric cooker on high pressure to cook 2 minutes.  For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure.  Cook 2 minutes.  Remove from heat.  For both models, quickly release pressure. Open lid carefully.  Stir before serving.

Ingredients

2 pounds carrots, rinsed

5 tablespoons butter

4 garlic cloves, minced

2 tablespoons honey

¼  teaspoon salt

¼  teaspoon fresh ground pepper

Chopped fresh parsley, for garnish

Directions

To prepare the honey garlic butter roasted carrots recipe:

Preheat your oven to 425°F (220°C).  Lightly oil a baking sheet and set aside. Quarter the carrots lengthwise, keep them attached near the base of the stem.

Melt butter over medium heat in a saucepan.  Add garlic and cook for 3 minutes, or until lightly browned, stirring very frequently.  Make sure not to burn the garlic.  Remove from heat and stir in honey and whisk to combine.

Arrange carrots on the prepared baking sheet and brush them with the honey garlic butter sauce.  Toss carrots to coat them evenly and arrange them in one layer.  Sprinkle with salt and pepper and bake for 15 minutes, or until carrots are tender.

Remove roasted carrots from oven and transfer to a serving plate.  Adjust seasoning if necessary.  Garnished with fresh chopped parsley.

Simple Yet Elegant Thanksgiving Table

Dave and I made a quick fall getaway trip up to Bossier City a couple of weeks ago for fun and a visit to Antique Shoppes At 1100 Barksdale.

Among treasures found was this vintage soup tureen.  For less than the cost of two tall specialty coffees,  I secured a lovely serving piece to adorn the sideboard.

“What recipe will fill the tureen on Thanksgiving day?” you may ask.

Autumn Squash Soup (in the taste style of Panera Bread)

Ingredients

1 Tablespoon vegetable or olive oil

2 pounds (l large) butternut squash, peeled,  seeded, and chopped into cubes

2 carrots, peeled and chopped

1 large yellow onion, peeled and chopped

2 teaspoons bottled minced garlic (easier to use and flavor packed)

1 teaspoon Kosher salt (or to taste)

1 teaspoon fine black pepper (or to taste)

2 Tablespoons brown sugar

½ teaspoon cinnamon

½ teaspoon nutmeg

3 cups vegetable broth

1 cup apple juice

½ cup pumpkin puree

2 Tablespoons maple syrup

2  Tablespoons cream cheese, softened

½ cup heavy cream (Greek yogurt or half-n-half may be substituted)

Directions

Preheat oven to 450°F.

Peel squash removing seeds.  Cut peeled butternut squash into chunks and place on a cookie sheet.  Drizzle olive oil over squash chunks and season with salt and pepper.

Bake at 450°F for 25 to 30 minutes or until fork tender.

Using a potato masher, mash the roasted squash cubes.  Set aside.

Meanwhile, in a Dutch oven or soup pot heat oil over medium-high heat.  Add chopped onions to heated oil and cook, stirring occasionally, until onion becomes soft and translucent.  Stir in minced garlic.

Add roasted butternut squash, pumpkin puree, broth, apple juice, brown sugar, cinnamon, nutmeg, salt, and pepper to pot and stir to incorporate.  Bring to a slight boil.  Cover and lower the heat to simmer.  Allow to simmer for 15 minutes to incorporate flavors.

Remove pot from the heat.  Add the maple syrup and softened cream cheese, stirring until cream cheese is melted.

Use a hand blender to blend mixture until smooth.  If you do not have a hand mixer, carefully transfer mixture to traditional stand blender in two batches. Puree each batch until smooth.  Transfer mixture back to the pot and adjust flavors to taste.

If you feel the soup is too thick, add more broth to reach desired consistency.

Roasted Pepitas Pumpkin Seed Kernels with Sea Salt

Garnish soup with a swirl of heavy cream, half-n-half, or dollop of Greek yogurt and roasted pepitas.

Rounding out the decorative details includes a selection of simple yet elegant Thanksgiving table items easy to find in retail stores, produce sections, and online retailers.

So many if not all of these items will transition beautifully from Thanksgiving to Christmas decor.

Yesterday I dropped by our local Joann store to pick up two small faux cedar wreaths for a holiday project.

More on that to come.

As soon as I walked through the front doors the aroma of cinnamon filled the air.  To say the scent instantly put me in the holiday mood is an understatement.

I spied a huge display cinnamon scented pine cones, and knew those babies were coming home with me.

Pine cones identify with fall, Thanksgiving, winter, and Christmas.

Further tie the season and holidays of cozy together by using pine cone ornaments tied with velvet ribbon as napkin rings.

Loop ribbon in your choice of design, texture, and color through the top of an ornament ring.

Tie each ornament around individual dinner napkins, securing in a loose knot.

Custom napkin rings made their way to the table several holidays ago by way of small oval framed pictures secured with wire ribbon and a tucked in ginkgo leaf.

Her bag of tasty tricks included adding candy bar pieces, flavoring extracts, calorie rich whole milk, and food coloring combinations transformed a store bought cake mix into the taste of homemade.

There’s Halloween goodies magic in a bag of Milano cookies and white chocolate chips.

M’mm M’mm mummy cookies are easy to make with a bag or two of Milano cookies, white chocolate chips, sprinkles, or candy eyes.

Milano cookie ghosts

Start by placing 2 cups of white chocolate chips and ½ teaspoon shortening  in a microwave safe bowl.  Microwave for 90 seconds.  Stir to incorporate. Microwave in 30 second intervals until chocolate is fully melted.

For extra smooth chocolate, add another ½ teaspoon of shortening to the melted chocolate; stirring well to mix.

Line a cookie sheet with parchment paper.  Place Milano cookies on cookie sheet.

Spoon melted chocolate over the top half of each Milano cookie and allow to set.

Reheat the remaining chocolate for 10 seconds to melt.  Carefully spoon melted chocolate into a resealable plastic bag.   Zip or seal the bag and snip off the bottom corner off the bag.

Drizzle chocolate over each cookie to create the bandage look.  Finish by adding candy eyes or sprinkles for the eyes to each cookie while chocolate is soft.

Refrigerate cookies to allow chocolate to set.

These Black Cat Cookies from Good Housekeeping immediately caught my eye.

Granted, there’s several steps included in this recipe, but the finished product makes it worthwhile.

Black Cat Cookies

Ingredients

Basic Sugar Cookies – recipe here

Black Cocoa Cookies – recipe here

Royal Icing – recipe here

Vodka or other clear alcohol (you might need to add a dram or two for the baker!)

Black and silver luster dust

Directions

Prepare cookie doughs as directed.  Use flour-coated circle cutters to cut out circles from sugar cookie dough, and use cocoa-coated cat cutters to cut out cats from black cocoa cookie dough.  Bake as directed and let cool completely.

Use royal icing to decorate sugar cookies and attach cat cookies on top.

Mix a small amount of clear alcohol with silver luster dust and use a paint brush to paint small brushstrokes on the royal icing of the sugar cookies. Repeat with black luster dust to paint bats.

Makes 1 dozen.

These witch cupcakes are so ugly they’re darling.

I’m taking baking liberty here by suggesting you make the cupcakes using cake mix.  Where the cake mix calls for water, I use milk for a richer homemade taste.

How to make the witch hats:

Place a wire rack over a baking sheet.  Use a serrated knife to carefully cut 3 in. from the point of the sugar cones.  Place the chocolate wafers on the rack.

Melt the chocolate chips in the microwave according to package directions. Spoon the melted chocolate over one cone at a time making sure to evenly cover each cone.

With a spatula, spread the chocolate to cover the wafer, adding more chocolate if necessary.

How to make the frosting:

Using an electric mixer, beat 2 cups confectioners’ sugar, 1 ¼ cup butter (2½ sticks), 1 tsp vanilla and ¼ tsp salt in a bowl until smooth and fluffy.

Tint frosting green by mixing two drops of yellow food coloring with two drops of blue.

How to make the witches:

Spread a small amount of frosting onto each cupcake, top with a doughnut. Frost sides and top of the doughnut.

Place the jelly beans, cut-side down, into the frosting for eyes.

Cut each taffy into 4 pieces, shape each into a nose and place under the eyes.

Pipe the brown frosting ( two drops of red and two drops of green) onto the jelly beans for pupils and over the jelly beans for eyebrows.

Pipe a mouth with the red frosting.

Break the shredded wheat into strands and place on top of each doughnut.

October is National Fire Prevention Month, and the week of October 9 is Fire Prevention Week.

Take the time this month to put safety measures into place to help prevent a fire in your home as well as carbon monoxide poisoning.

Discuss and devise a fire escape plan with all members of your household.

Around the house tips for preventing a house fire include:

Changing furnace filters regularly will cut down on a buildup of dust and lint that can catch fire.

Inspect space heaters before and after each use, making sure to place heaters a minimum of three feet away from anything combustible.

Never place items close to the heating element or pilot light of a water heater.

Clean out the dryer lint filter after each drying cycle.

Give the area behind and around the dryer a quick check for lint build up or laundry items that have fallen under or behind the dryer.

Kitchens are hot spots for a house fires to originate in.  Never leave anything flammable near the stove or oven or on stovetop.

Be mindful of kitchen towels and oven mitts when using around heating elements.

I know how easy it is because I did just that a couple of weeks ago and burned up a saucepan.

Just a friendly October reminder to roll up your sleeve and get your flu shot.

Getting a flu shot helps to reduce the risk of getting the flu and the complications that come with it.

The one and only time I had the flu it liked to have killed me.  I was down for almost eight weeks, with one week of that spent in the hospital.

October is breast cancer awareness month.

Annual mammograms can detect cancer early when it is most treatable. The American Cancer Society recommends that women at average risk of breast cancer begin having a yearly mammogram at age 45, and a mammogram every other year beginning at age 55.

Getting your mammogram is a pressing matter in terms of procedure and prevention.

Mammography is a fast procedure (about 20 minutes).

Discomfort is minimal for most women.

The procedure is safe.

Early detection through a routine mammogram is one of the attributing factors in my mother’s breast cancer being caught in the early stages which contributed to her survival.

It made a believer out of me, so every October a mammogram it is.

Housekeeping goes beyond the everyday of all things house that make a home.

Prevention and wellness drives this well-oiled machine we call home and family.

Fall deliciously places the baking, cooking, decorating, and entertaining emphasis on apples and pumpkins, appropriately planting a seed of inspiration.

Introducing hints of fall finery and a new or improved recipe to the troops here at Places In The Home is part of the fall of it all.

Those of you who get into fall baking and cooking and taste testing know apples and pumpkins are the stars of the show.

Sprinkles and dustings of cinnamon, cloves, and nutmeg deliciously dress cored, chopped, sliced, minced, cubed, grated or diced apples.

One small apple measures 2 ¼ inches across.

One medium apple measures 2 ½ to 2 ¾ inches across.

One large apple measures 3¾ inches across.

How many apples are there in a cup?

About 1 1/3 cups sliced or cubed.

About 1¼ cups diced.

About 1 cup finely sliced, minced, or grated.

Coring and Peeling an Apple

Carefully cut the skin off the apple using a paring knife.

Cut the apple into four wedges.

Remove the core out of each wedge.

Cut, slice, or chop the apples according to recipe preference.

One 2½ pound pie pumpkin equals 1¾ cups pumpkin puree (which is equivalent to one 15 ounce can pumpkin).

A 3½ pound pie pumpkin equals 2½  cups pumpkin puree.

Pumpkin spice latte, pumpkin soup, pumpkin bread, pumpkin sangria, and the big daddy of fall desserts, pumpkin pie, is in the fall tastes and treats spotlight.

How to Prep and Puree A Pumpkin 

You can substitute homemade pumpkin puree for any recipe that calls for canned pumpkin.

With that fall baking fact in mind, let’s check out how to make homemade pumpkin puree.

Here we will be using a sugar pumpkin (also called a pie pumpkin), the best for cooking and baking.

Preheat the oven to 375°F.

Carefully cut off the top of the pumpkin.  Using a large metal spoon, scoop out the seeds and the “strings”.

Cut the pumpkin in half.

Line a baking sheet with foil and place the pumpkin halves cut side down onto the baking sheet.

Generously rub the outer skin of each pumpkin half with olive oil.

Place in a 375°F preheated oven and roast for 45-60 minutes or until a fork easily inserts into each pumpkin half.

Allow to cool for twenty minutes or until cool enough to handle without risk of burning your hands.

Using a large metal spoon, scoop out the softened pulp.  Place the pulp into in a food processor and pulse until smooth.

Pumpkin Soup with Grilled Cheese Croutons

Ingredients

2 Sugar Pie pumpkins (each about 2 lb.)
Substitution: 4 cups  of canned pumpkin puree

Extra-virgin olive oil for brushing and drizzling

6 Tbs. unsalted butter

2 shallots, diced

4 garlic cloves, minced

1 Tbs. minced fresh thyme, plus whole sprigs for garnish

¼  cup  Marsala

5 cups vegetable broth, plus more as needed

3 Tbs. maple syrup

1 cup half-and-half

Kosher salt and freshly ground pepper

For the grilled cheese croutons:

2 Tbs. unsalted butter, at room temperature

6 slices artisan white bread or sourdough bread

1 ½ cups grated Gruyére cheese

Directions

To make the soup, using a sharp knife, carefully cut off the top of each pumpkin to remove the stem, then halve each pumpkin vertically.

Using a spoon, scoop out the seeds and any stringy fibers and discard.

Brush the flesh of the pumpkins generously with olive oil, then place them, cut sides down, on the prepared baking sheet.  Bake until the pumpkins are very tender when pricked with a fork, about 50 minutes.  Let cool for 15 minutes, then scoop the flesh from the peel into a bowl; discard the peels.

You should have about 4 cups of pumpkin.  Set aside.

In a Dutch oven or large, heavy saucepan over medium heat, melt 3 Tbs. of the butter.

Add the shallots and cook, stirring occasionally, until softened, about 5 minutes.  Add the garlic and thyme and cook, stirring, until fragrant, 1 minute.

Add the Marsala and deglaze the pan, stirring to scrape up any bits on the bottom of the pot.  Add the pumpkin and cook, stirring occasionally, until lightly browned, about 3 minutes.  Add the broth and maple syrup.

Bring to a simmer, then reduce the heat to low and simmer gently for 20 minutes.  Stir in the half-and-half.

Using an immersion blender, blend the soup until smooth. (Alternatively, working in batches, transfer the soup to a blender and puree until smooth. Pour back into the pot.)

Add the remaining 3 Tbs. butter to the soup and stir until the butter is melted.  Season with salt and pepper.

Stir in more vegetable broth, if desired, to achieve the desired consistency.  Keep warm over low heat while you make the grilled cheese croutons.

To make grilled cheese croutons, spread the butter on one side of each slice of bread, dividing it evenly.

Heat a large fry pan over medium heat.

Place 3 slices of the bread, butter side down, in the fry pan.  Divide the cheese evenly between the 3 slices in the pan, then top with remaining bread slices, butter side up.

Cook until the bottom of bread is golden brown, then carefully flip each sandwich and continue to cook until the cheese is melted, about 5 minutes, turning down the heat if the bread is browning too quickly.

Transfer the grilled cheese sandwiches to a cutting board and let cool slightly while you ladle the warm soup into 6 individual bowls.

Drizzle each serving of soup lightly with olive oil and sprinkle with a few grinds of pepper.  Cut the grilled cheese sandwiches into 1-inch (2.5-cm) cubes and divide them evenly among the bowls of soup.

Garnish with thyme sprigs and serve immediately.  Serves 6.

Gorgeous is in the eye and the glue gun of the beholder.

Faux apples, a natural grapevine wreath, and several yards of burlap ribbon  is all you need to DIY your way to a lovely fall wreath.

In the case of my fall wreath DIY project, I chose to go with a Styrofoam wreath.

Using burlap ribbon from the dollar store, I wrapped the entire wreath to conceal the Styrofoam.

Using a hot glue gun, I glued various sizes of red faux apples and green mini pears from Michaels around the top and sides of the wreath.

Spanish moss serves as an excellent filler and gap cover, and as in the image of the grapevine apple wreaths, burlap ribbon (5½” wide) with a finished edge completes the look.

Cinnamon water is a recent fall perfect beverage discovery that’s as tasty as it is easy to make.

This stove top method brings out the flavor and color of the cinnamon.

Begin by adding 2 cinnamon sticks to 2 cups of water to a saucepan. Bring to a boil, then reduce to a simmer for 5 minutes.

Allow concentrate to cool before adding to cold water and ice.
